They have a happy herd of dairy cows that graze the fields and provide the finest milk for our yoghurt.

O’Neills Dry Cure Bacon
We know the tastiest bacon is dry cured by hand in the traditional way with no added water or phosphates, that’s why here at Jasper’s we use O’Neills Dry Cure Bacon from Enniscorthy, Co. Wexford.
O Neill’s multi award-winning bacon (numerous Great Taste Awards, Blas na hEireann and Georgina Campbell Awards) is made with Irish Pork and is cured by hand in the traditional way using their unique family recipe with natural sea salt. There is 30% less salt than average wet cured rashers and as they don’t add water, no phosphates are needed. With O’Neill’s you get all meat, so when the bacon is cooking there is no shrinking on the pan for when we serve this delicious bacon to you at brunch or lunch.
Redmond Farm
Beef production from grass is one of Irish farming’s greatest strengths and something Redmond Farm manages extremely well. The farm consists of 300 acres of which 500 Angus cross heifers are finished annually. The aim is to produce as much feed on the farm as feasible. The entire process from farm gate to hotel plate is within an 8-10 km radius and is one. Here at Jasper’s all our steaks are supplied by Redmon Farm for a quality piece of steak on each plate.

Meadowfield Farm
Meadowfield Farm Goats Milk was established in 2015 in Co. Wexford by local farmer John Joe with his wife Marisa who saw a need in the Irish market for high quality, pleasant tasting, goat’s milk product. Their herd of goats is fed on a grass and herb diet, which makes the milk mild, sweet, and creamy. It is then pasteurised but non-homogenised, for milk that tastes the way it should, full of simple, creamy goodness.
Killiane Castle Honey
Following on from his Grandfathers footsteps and love are bees, Ian Mernagh began beekeeping in 2015 with his family on the grounds of Killiane Castle, just outside of Wexford town. They are delighted to share all the efforts of their busy Irish native bees with you providing the natural goodness of raw honey. Their commitment to their bees is they only sell honey from their hives which is raw and full of the nourishment they provide for your health and enjoyment.
Honey in Jaspers is Summer Blossom honey: Their summer blossom honey is made by their bees through the months of July and August from the home farm of Killiane Castle and surrounding areas in South Wexford. This honey predominantly contains nectar from different clover varieties and bramble together with all of the other summer flowers in the area.
